Batch Cooking: Whole Wheat Blueberry Waffles


One my big concerns over the past couple of weeks has been my need to get us out of the house early and happy--not early and miserable, or happy and late. I'm happy to announce that we have improved dramatically.

This is due in large part to the fact that we've entirely shifted our breakfast approach. I can't believe I'm about to admit this, but we are now eating our breakfast on the bus. I'm a real fanatic about family meals at home, at the table. It's something that since becoming a single mom I've held onto very tightly, hoping to keep steady and healthy daily rituals around eating and other important needs.

But...desperate times call for desperate measures, right? I've realized I'll take a quiet, peaceful morning with waffles on the bus over a morning complete with both warm steel cut oats with milk and honey and crabby, hurried children. And so we are dining on the road three mornings a week.

I'm still coming up with a list of food ideas that don't involve dropping spoons over the bumpy road or spilling milk on the lady next to us. So far I have:

*Nut butter and jelly sandwiches (not my favorite option)

*Homemade waffles

*Cooled slices of puff pancake

*Muffins (also not the best option)

Aaaaaaaaaaand...that's about it. I know I can think of more. Bars of some sort, maybe? There must be a healthy granola bar type thing I can make.

So I spent Wednesday night making loads and loads of delicious whole wheat blueberry waffles with our new hand-me-down waffle iron. I froze most of them and brought some for breakfast on Thursday, and it went smashingly well.

Any more breakfast-on-the-go ideas? Something healthier than what I've come up with? I think there's a real need for a whole cookbook geared toward portable healthy food. If I knew more about cooking, I'd write it.

What a great idea! (Not sure the waffles would last long enough for me to get them into the freezer...would have to do a stealth in the middle of the night kinda thing). I don't have any bright ideas for you, though (egg & cheese sandwiches? Bagels & cream cheese)...we're pretty much a cold cereal and milk family during the week, in which I have to admit my only participation is buying the milk & cereal.

That's sounds deeeelish! I am not the cook in the family or perhaps I'd have some better idears for you. I am also not a breakfast girl and normally just gulp down a carnation b-fast. You were/are and always will be an amazing mom!

egg, tomato and cheese sandwiches are one of my favorite portable breakfast items.

Blueberry waffles - this for me is a weekend treat, and the weekend has just passed me by :(
Oh well they are a great feast for the eyes.

Bananas. If we ever have to rush out the door before someone's really eaten enough, Bananas always come to the rescue. They are filling, portable, and you can't go wrong with a simple piece of fruit.

I like the idea of frozen home-made waffles for breakfast. I often freeze extra pancakes which heat up really well.

One of my favorite make ahead and freeze foods are burritos... I like sweet potato and black bean burritos. They freeze really well. I assume bean and cheese would freeze well too, but I've never tried freezing breakfast burritos. Not sure how the eggs would do. ;-)

I also take Cliff Bars with me when I'm travelling. Not sure they're the best option, but they are filling and organic. Which reminds me, I used to make protein bars often and Hubba's been asking for them.

I would definately have a copy of your book... when you decide to write it. ;-)

Fruit leather. I tried making some, and I'm not sure I'm going to be able to get it to come off the wax paper I used.

This weekend I found some to buy from Streth Island Fruit Co. (All-natural Fruit Strips). It only contains fruit puree concentrates (no added sugars, etc.). Thought of you.

My local bus doesn't allow food or drink. :(
